My current favorite cookbook author, Virginia Willis, has a new book out on lightened-up Southern food. Virginia does an outstanding job of using real food and good food but balancing it off with healthy food. These shortcakes are to die for!! We both recommend that you use the Vanilla Cream recipe to fill them, but whipped cream works too.
